I'll order ~five kilos of different high-end chocolate from chocosphere.com and see how they taste when drinking.

When I've tasted them all, at least a few times to average out variables like the milk I use.

Are you kidding? :-) I might try some flowery language, but like/dislike is good enough.

Matthew Cornell Got back from a stressful trip last night at 2am, so I'll try two servings this morning:

o Michel Cluizel Couverture Noir 72% (http://www.chocosphere.com/Html/Products/michelcluizel.html#mc_cook):

Rich flavor, but tastes like a blend - no strong character emerges that I taste. First impression: Not bad, perhaps not worth the slightly higher price than others.

o Actually, the same impression I got with the Cluizel - a tasty blend, but no identifiable character. I might be expecting too much. These aren't "single origin" choices. Still, how can you go wrong with this quality.

o Last night: Santander 70% (http://www.chocosphere.com/cgi-bin/webstore/web_store.cgi?page=/Products/valrhona-chef.html&cart_id=%%cart_id%%#araguani): Has a tasty, smoky flavor. Plus, less expensive than the others. Yum.

o This morning: Valrhona Araguani Les Feves (http://www.chocosphere.com/cgi-bin/webstore/web_store.cgi?page=/Products/valrhona-chef.html&cart_id=%%cart_id%%#bitter): Like the Guanaja, tastes delicious, but not complex. I like this better than that one, though. A keeper.

Matthew Cornell Tried the Domori Rio Caraibe Superior 75%. Found it less fruity than the Apurimac, but with a similar character. Pretty good, but doesn't blow me away.
